There are hundreds of recipes for beef stroganoff out there, and I am trying not to be biased here, but mine is the best!! (I think) I serve it with roasted diced herb potatoes, buttered rice and some Purple sprouting. It is quick and easy!
1In a large skillet, over high heat, give a few good glugs of virgin oil, in goes the stir-fry beef and season with the salt and pepper and a good sprinkle of the smoked paprika (maybe do this in two batches, otherwise it may cool the pan too much and end up boiling the beef instead of stir-frying)
2Once sealed nicely, then add the onion pepper then the mushrooms and sauté.
3Now add a glass of wine and let it de-glaze the pan (swill) to lift the fond from the bottom.
4Add the cream fresh, bring to the boil, and check the seasoning.
5Now ready to serve!
1 kg Springbok Beef stir-fry
1 Red Pepper, sliced
1 Onion, sliced
1 Punnet of button Mushrooms, sliced
Sea salt
Cracked Black Pepper
2 tsp Smoked Paprika
1/2 tsp Nutmeg
Glass White wine
250 g Crème fresh
Virgin Oil
