This is a great Jerk, wet rub. The combination of the onion, scallions, peppers, and spices give this rub a fantastic flavour. You can adjust the heat by increasing or reducing the amount of peppers in the recipe. This rub can be used on poultry, pork, fish, and seafood. Very easy and quite versatile.
1Use kitchen gloves to prepare Habanero Peppers.
2Place onion, scallion, peppers, and vegetable oil into a blender or food processor. Blend through.
3Carefully remove lid and stand back. The habaneros will be quite strong at this point and getting to close could cause your nose to burn and your eyes to water profusely.
4Transfer mixture into a bowl and add remaining herbs and spices.
5I recommend letting the mixture sit for at least 20-30 minutes before using.
1 Medium Onion, rough chopped
1 Bunch Spring Onion, rough chopped
2 Habanero Peppers, rough chopped
2 tbsp Vegetable Oil
2 tbsp Dried Thyme
2 tsp Sea Salt
1 tsp All Spice
1 tsp Black Pepper
Pinch Nutmeg
Pinch Cinnamon
