My children just love Quesadillas’ They like to help build them as well. I think the Mozzarella cheese is just right for this as it’s a little stringy and not to overpowering so you can taste the mangos as well as the creamy avocados and of course the chicken, just try not to fill it too much!!
1Heat a skillet pan over medium heat, and one by one warm each tortilla one side then the other.
2Lay out all the tortillas side by side on a work bench and start adding an equal share of the pulled chicken to each of the tortillas.
3Only fill one half of the disk, as the other half will be the top.
4After the chicken lay over the avocados, then the mango and then sprinkle over some cheese.
5Now fold over the top to make a semi-circle.
6This should be no more than 1cm thick. Now place two quesadillas back in the pan and using a fish slice turn occasionally until the cheese inside has melted and the tortilla is a nice golden brown.
7Cut in half and serve with salsa and guacamole.
1 kg Springbok pulled smoked Chicken
10 Flour/ Corn Tortillas
3 Avocados halved, peeled, deseeded, and cut into strips
2 Ripe Alphonso Mangos halved, peeled, deseeded, and cut into strips
250 g Grated Mozzarella/ Jack Cheese
